With its refreshingly cool and complex flavour, Green Tea Ice Cream is a perennial favourite with most members of the family – all the way from grandparents to kids. Make this at home and serve it with some sweetened red beans for a modern take on a traditional combination.

Green Tea Ice Cream

Makes 4 servings. 

 

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • ¼ tspn salt
  • 6 large eggs
  • 2/3 cup sugar
  • 2 tbsp matcha (powdered Japanese green tea)


Method:

  1. Bring cream, milk, and salt to a boil in a heavy saucepan and remove from heat.
  2. Whisk together eggs, sugar, and matcha powder in a bowl, then add 1 cup hot cream mixture in a slow stream, whisking vigorously to make a smooth custard.
  3. Whisk custard into remaining cream mixture in saucepan and cook over moderately low heat, stirring constantly with a wooden spoon, until it is thick enough to coat back of spoon.
  4. Immediately pour green tea custard through a fine sieve into a metal bowl, then cool to room temperature, stirring occasionally.
  5. Chill, covered, until cold, at least 1 hour.
  6. Freeze in ice cream maker, or if you don’t own an ice cream maker, place the mixture in your freezer and stir the custard every hour to break up any ice crystals.
  7. Once the ice cream is smooth and thick, it is ready.
